Heritage 2025 — Traditional Mead
This year’s Heritage marks the next chapter in our flagship traditional mead—a mead always rooted in tradition, yet renewed by each harvest. For 2025, we’ve honored that legacy by using a distinct honey varietal, sourced and tasted with intention, reinforcing our commitment to provenance and seasonal authenticity.
🐝 New Honey, New Character
Unlike last year’s batch, which featured raw wildflower honey , 2025 Heritage uses raw single-source, spring-foraged blossom honey from Reed Honey Farm in Montgomery. We walked every aisle, inspected each hive, and vouched for their practices—just as we do when working partners, or pulling from our own apiary. This honey’s bright floral aromatics, hint of citrus, and lush honeydew markers give this vintage a lighter, more aromatic front, balanced by the depth and body the mead is known for.
🍯 Tasting the Difference
Appearance: Golden-amber clarity, reminding us of sunlit late-spring fields.
Nose: Fresh blossoms, lemon peel, and just a whisper of mead-honed earth.
Palate: Silky and warm, with honey-forward sweetness and a cleaner finish—a shift from last year’s richer, darker honey tones.
ABV: ~16% – consistent strength, but this year it feels more delicate rather than complacent.

Fermenting, Bottling, labeling, and handling all still happens at Hays Manor, linking each vintage back to our roots and rituals.
